Raw Food Restaurant in Tokyo “Raw Wednesday” ❤ ローフードカフェ「Raw Wednesday」

From this month (February 2014) we started a new project! We want to visit all raw food restaurants and other ealthy places in Tokyo. There are some juice bars, vegan shopes and organic markets, farms etc.  And we made a first video already! Me with my japanese friend Nodoka visited my favourite restaurant near Omotesando station, “Raw Wednesday”. Well I can see some mistakes already in this video…I would like to hear from you my friend, what you want to see, to ask and find in Tokyo, some ideas, comments etc? Raw Food Parenting Important Q&A From The Raw Food Family (Interview with Ka Sundance)

As you maybe already know, I am a mother of 4 years old son and I am a raw food mommy for more than 2 years now. Also I work with small kids and their mothers in Tokyo. I have two classes every month. One is for kids; I named it «Raw-Yummy-Tummy» and one for mothers «Raw-Yummy-Mommy». This is a big pleasure to work with small kids and I believe that raw food diet is the healthiest diet for small children.

If you are parent and interesting in raw food diet, probably you are already searching for some very important answers about vitamin B12, calcium, breast feeding and others. I had same questions when I started my raw food life and I know how difficult to find correct and right answers. So I decided to ask these important questions for you to my good friend and my teacher, Ka Sundance, of the Raw Food Family. He generously accepted this interview from his current family outpost in Costa Rica. The Raw Food Family is raising five raw kids and lives on a healthy, natural mostly raw diet since more than 10 years. They teach families about healthy nutrition for children, and publish frequently to their youtube channel. They eat mostly locally grown, organic food, and also fresh tropical fruits, vegetables, nuts, seeds, roots and other natural non-processed superfoods while traveling and living for extended periods in places like Thailand, Bali, Costa Rica.

Strawberry Christmas Cake

In Japan Christmas is very popular holiday now, even japanese people dont know what is it exactly, they love to have Christmas party and give each other gifts. Usually, in this day people eat white cream cake with strawberries. Therefore, japanese grow strawberries for Christmas holiday and for this cake. I decided to make a very similar raw cake for my japanese family. You should understand, even raw food can be unhealthy. Yes, mix of many ingrediends and mix fruits with nuts is not good for our health, but if you have to choose one, of course, raw cake is better than one from the shop. Almost raw cakes are made from nuts, and often from cawshew nuts. Its not easy to find raw cashew nuts,  which will sprout, be careful. This cake is easy to make and very delicious, all my no vegan family loved it and could not understand what is this a nice taste 😉 It was not easy to explan them about raw food, but I tried my best. 🙂 Here you are, I made a video how I made this yummy cake. Raw Till 4 – My Dairy

Raw till 4 – means eating raw food (specifically fruit) until 4pm in the day then having a high carb cooked plant foods dinner. This is a program for transition to raw diet. グリーンスムージーの作り方・飲み方のガイドラインを話しました。V. Boutenkoの本をしょうかいしまして、グリーンスムージーを飲んでみました。グリーンスムージーを考案して以来、私自身毎日飲み続けているだけでなく、たくさんの人にお勧めしてきました。自分の命が尽きる最後の日まで、グリーンスムージーを飲み続けたいと思っています。私の家族全員そして、たくさんの友人たちもグリーンスムージーが大好きです。

  • 毎日朝一番に、その日に飲む量のグリーンスムージーを作りましょう。
    1日1~2リットルが最適。朝飲む分をたっぷりとグラスに注いだら、残りは冷蔵庫またはどこか涼しい場所に保管すること。
  • グリーンスムージーは、ゆっくりと唾液と混ぜ合わせるようにして飲みましょう。
    蓋付きの容器に入れて職場に持っていけば、こぼす心配もなく、他人に何を飲んでいるか詮索されることもありません。
  • グリーンスムージーには、グリーン、フルーツと水以外は入れないこと。
    ナッツ、種子、油分、サプリメントなど、他の材料をグリーンスムージーに入れることはお勧めしません。これらを加えることで、消化管の中での吸収が遅れ、 何らかの刺激やガスを発生させる可能性があるからです。本の中では、基本の材料以外のものを加えたレシピもいくつか紹介していますが、 日常的に摂取するスムージーは、基本(フルーツとグリーンだけ)に忠実に。
  • グリーンスムージーは、食事と一緒ではなく単体で飲むこと。
    ほんの小さなクラッカーやあめ玉でさえも一緒には食べないでください。 スムージーを飲む前後に40分程度あければ、何を食べても大丈夫です。グリーンスムージーから、最大限の栄養を摂取するためです。
  • にんじん、ビーツ、ブロッコリーの茎、ズッキーニ、カリフラワー、キャベツ、芽キャベツ、ナス、カボチャ、オクラ、さやエンドウ、トウモロコシ、 緑豆やその他のでんぷん質の野菜をグリーンスムージーに加えないこと。
    でんぷん質の野菜はフルーツとの食べ合わせが悪く、腸内でガスが発生しやすくなります。
  • ひとつのスムージーに、たくさんの材料を入れすぎないこと。
    例えば、9種類のフルーツと12種類のグリーンは多すぎます。 植物の栄養価を最大限に取り入れるため、そして消化器官に負担をかけないように、レシピはなるべくシンプルに。
  • 次に飲むスムージーが常に楽しみに思えるような、おいしいスムージー作りの達人になりましょう。おいしくないと、そのうち飲まなくなってしまいます。
  • スムージーに入れるグリーンはいつも同じものではなく、ローテーションで様々な種類を摂取しましょう。
    世界中のほとんどのグリーンには、微量のアルカロイド(窒素を含むアルカリ性の有機化合物)が含まれています。 少量のアルカロイドは人体に有害というほどのものではなく、むしろ免疫系を強化する効果があります。 しかし、ケールやほうれん草、その他なんでも一種類のグリーンだけを毎日食べ続けると、一種類のアルカロイドが体内に蓄積されて、 何かしらの中毒症状を引き起こす可能性があります。
    一方、フルーツはいつも種類を変える必要はありません。一般的に、フルーツはアルカロイドをほとんど含まないため、 グリーンのような中毒反応を起こす心配はないからです。ただし、使用するフルーツを変えることで味と摂取する栄養素の幅が広がります。
  • 可能な限りオーガニック栽培の農産物を選びましょう。
    農薬などの有毒化学物質が含まれていないからというだけでなく、慣行栽培の農産物に比べてオーガニック栽培のものは遥かに栄養価が高いからです。 ほとんどの現代人は、栄養が不足しています。体に栄養を与えるためには、できる限りオーガニックで地元産の野菜やフルーツを摂取しましょう。 木の上で熟されたフルーツはそうでないものと比較して栄養価が何倍も高く、収穫直後に最も多くの栄養素を含みます。

Raw Rose Cheese Cake

13This cake I made for my November`s raw cooking class for mothers. If you dont know, sometimes I make classes for kids and for mothers here, in Tokyo. Class for kids I named “Raw-Yummy-Tummy” and class for mothers “Raw-Yummy-Mommy” 🙂 In the end of lesson we have a tea time and I wanted to make some sweets at home, so all our guests can try a raw cake. I had nice small dried roses, which I bought before in a supermarket, after dried them in my dehydrater. Those flowers you can buy in Japan in big supermarkets, usually in a veggies  corner. You can eat those roses,  make tea or decorate your dishes. So I wanted to use them for my cake and its why I created my new Raw Rose Cheese Cake. 🙂 There is a recipe for 20-23 cm springform pan. I always have my nuts at home, soak and dehydrate them, so it this recipe I use already dried nuts, but its not necessary to dry them before use. Continue reading

Raw Hemp Seeds Milk Unshelled (Video Recipe)

hemp-seeds-milkI could not find raw hemp seeds in Japan for long time until my cockatoo Lola came to our home (read my story how I found a raw hemp seeds in Japan). Finally,  I bought 3 kg of raw unshelled whole hemp seeds!  Its a long process to shell hemp seeds at home, so I prefer to make hemp milk!  For some of you, hemp milk might be a rather out there concept but I can assure you, it tastes great and is so simple to make. You can make it with either unshelled or shelled hemp seeds, the difference is that you will need to soak the unshelled seeds for 2-3 hours. You may find a stronger taste with the unshelled whole seeds. It’s a great source of protein and contains essential minerals and amino acids. Continue reading

How I found hemp seeds in Japan?

Not many people know that Hemp seeds have been used as a source of food throughout Asia and parts of Russia for generations. People grew up hemp in their fields and used as oatmeal, made oil and butter. In Russia, hemp butter was used as a condiment by the peasants. People made hemp milk for kids for generations. Unfortunately, people forgot about hemp benefits our day. Hemp was Russia’s primary trade crop in the 18th and 19th centuries. Soviet Union was the biggest exporter of hemp in the world until 1961, when they joined convention against hemp.

Pumpkin Cookies

pumpkin-cookiesI had a little left over pumpkin and decided to create a cookies. So I used only some ingredients I had in my home, and result exceeded all my expectations 😉 I had a Pumpkin Chocolate Pudding, which I made yesterday and simply spread it between two cookies, added some cashew nuts and voilà 😉 If you have a dehydrator, you can easy to make these cookies at home.  

 Recipe:

1 cup of raw pumpkin (or leftover pulp from your pumpkin juice)

Raw Pumpkin Chocolate Pudding

CIMG8076The end of October and we made a Hallowen Party with our Raw-Yummy-Tummy Cooking class for kids. 25 kids joined our class with parents. This is my first experience to work with so many kids and raw food! I didnt want to use any techniques such as blender or juicer, so I decided to choice a very simple recipe – Raw Pumpkin Chocolate Pudding. I ordered very riped avocados for this lesson, so kids could mash and mix all ingredients with forks. One by one ingredients, mix and mush more until its looks very like chocolate pudding. Its really great and delicious pudding! If you give it to your friends, they will not find from what is made. 😉 Nuts milk and sweetener will erase avocado`s flavor and taste, and I strongly recomend you to use almond or other nuts milk for this reipe, you can try without, but avocado will taste. And you can add some dry fruits or nuts instead of raw pumpkin if you prefer. Unfortunately, I can`t tape a video while my kids class, its prohibit, so I cook it once myself at home for you.
