Raw Almond Milk Recipe

Raw Almond Milk RecipeI know that many people afraid to make Raw Almond Milk, they are simply lazy, don’t have time etc. 😉 Ditch the store-bought additives and sugar (read here why you shouldn’t buy Almond Milk in store) and learn how to make your own healthy dairy alternative at home! You have to soak raw almonds in water overnight and in the morning your milk will be ready for 5 minutes! Raw Almond Milk Recipe is easy to make and delicious!

Raw Almond Milk Recipe 

Ingredients

Two main ingredients:

  • 3-4 cups pure water
  • 1 cup almonds soaked 8 hours (overnight) and rinsed thoroughly (also you can use a raw almond paste or raw almond butter instead of whole raw almonds).

The rest of the ingredients are optional, but it might taste better with:

  • 1-2 dates (if you like a little sweet milk)
  • pinch sea salt (not necessary, but a pinch of salt triggers sensors and makes your dessert taste even sweeter)
  • 1 tablespoon extra virgin coconut oil (only if you want to add some healthy fat)
  • 1 teaspoon vanilla (optional)
  • 1 teaspoon organic sunflower lecithin to emulsify (optional, for people who want to keep milk a couple days and don’t like to shake it every time). Lecithin is used as a stabilizer to keep the almond milk emulsified (i.e. keep it the same consistency throughout).
  • 1 teaspoon of lemon juice, it will act as a natural preservative. You should be able to store the milk 3-5 days in your refrigerator.

ASSEMBLY:

Blend ingredients and strain through a chinois, nut milk bag or a cheesecloth-lined strainer. I like to strain my milk through a very fine double grain stainless strainer, but my son prefers to use nut milk bag 😉

For Chocolate: Add ¼ cup raw cacao powder and 1 tablespoon your favorite natural sweetener.

For Strawberry: Add 1 cup strawberries, fresh or frozen. Strain if desired.
