I have couple reasons why I cooked these raw coconut-strawberries White pink Cookies. First one its because next month is March and its month of White Day. In Japan Valentine’s Day is celebrated in a very unique style. It is the women who present gifts to men. What is more unique in Japan is that there exists a “White Day” which takes place on March 14th, exactly one month after Valentine’s Day. On White Day men are supposed to give return gifts to women who gifted them chocolates on Valentine’s Day. More often the color of the chocolate is white because of the name of the day.
Second reason, March is the season of strawberries! In the natural world, strawberries ripen around March to April, but due to advanced agricultural techniques and the miracle of greenhouses, Japan’s strawberry season lasts from December to May. By using strawberries I received a nice pink color like the color of Sakura flowers. The cherry blossoms (sakura) usually bloom in the last week of March and the first two weeks of April in Tokyo. Therefore white and pink colors are most popular colors in March.
There are the favorites of my friends and my husband. To make 25-36 cookies you will need:
3 cups dried raw, sweetened coconut flakes
1,5 cup almond flour (to make it pulse the almonds in a food processor for a fine consistency)
1 cup raw coconut syrup or other sweetener
1 cup dried strawberries or fresh
1/3 cup melted coconut butter (or cacao butter)
1 tbsp vanilla extract
In a large bowl, combine all the ingredients and stir well to combine. You can also use hand blender or food processor.
Using a small ice cream scoop, your hands, or tea spoon, spoon rounds of the dough onto dehydrator screens. If you are using hands, it helps to refrigerate the mix a bit prior to forming the cookies. Dehydrate at 46C (115F) for 12 to 24 hours, or until crisp on the outside and nice and chewy on the inside.
If you don’t have a dehydrator, leave cookies at fridge for about 2 hours. For white color cookies don’t add strawberries and use the most light color sweetener like light agave syrup or maple syrup. Bon appetite!
