I feel like eating more fat food when it turns cold! These are healthy cookies made with raw shelled hemp seeds. They will increase the protein, fiber, and healthy fats. They are fat, but they are full of healthy fats and omega fatty acids. I made them for my family and they were gone in a day! Have them after a workout or as a mid-day snack.
Raw Hemp Cookies
1 cup raw hemp flour
1 1/2 cup oat flour
3/4 cup raw hemp seeds
1/4 cup coconut sugar
1/4 cup raw hemp seeds oil
1/4 cup coconut oil
1/4 cup date paste* or maple syrup
*For date paste, mix 5-8 dates and 1/2 cup of water. Beat up until getting a homogenous paste.
Combine flours, hemp seeds and sugar. Melt coconut oil and mix hemp oil and maple syrup. Blend dry and liquid ingredients. Shape into cookies and press. Dehydrate cookies at 115 F for 6-8 hours, or overnight. Store in an airtight container for about a week, or longer in the refrigerator.
Tips:
I made two version raw and cooked hemp cookies. Cooked cookies have a very strong flavor and dark color like chocolate. You can use hemp flour for different recipes instead of wheat flour.
How to make YOUR OWN OAT FLOUR:
Oat flour is the easiest to make at home from whole rolled oats (sometimes called “old fashioned oats”), gluten-free or not. I like to sprout my whole oats first and after dry them in a dehydrator. Its easy to make oat flour! 😉 Place oats in the bowl of a food processor or blender and pulse for ten 3-second intervals. Process consistently on high for 1-2 more minutes until the oats are as finely ground as possible.
