Its difficult to believe maybe, but the combination of mung beans and apple juice remind a yogurt flavor. This Mung Beans yogurt is not only delicious, but also very rich in proteins and minerals. To make this yogurt even more nutritional, you can easy to sprout mung beans first. Serve it with fruits and your kids will love it!
INGREDIENTS
1 cup apple juice or pineapples juice
1 kiwi fruit
1/2 lemon (squeeze the lemon to juice)
1/2 cup sprouted mung beans
1/2 dry coconut flakes or flour
1/2 avocado (stoned and peeled)
2 tbsp flax seeds
0.5 cm fresh ginger
1 tbsp fresh mint
pinch himalayan pink salt
Blend all ingredients in blender until completely smooth. Serve with fruits, nuts, seeds, flowers, sprouts or granola.
Note: Mint is very important ingredient in this recipe, but if you dont have fresh mint leaves, you can use instead 2-3 drops of essential mint oils or mint extract. If you dont have dry coconuts, you can replace them with your favourite nuts.
