Mimi Kirk’s Cheesecake

 I like Mimi Kirk very much! She was nominated as a sexiest vegetarian over 50 at age 70! She looks really amazing for her age. Her raw food recipes videos helped me a lot, when I just started my raw food life. I was so inspired by her, so ordered her book ”Live Raw” with very nice recipes. On the first step of transition to raw food I wanted sweets, I had a lot of nuts every day.  I made a cheesecake from her book and invited my friends. So it was my first raw food cake and everybody loved it! Original recipe with blackberries, but I could not find them in Tokyo, so replaced with bluberries. You can use any kind of berries for this recipe. This cake is perfect for hot summer time, because required to be frozen.  And be careful, this is a big size cake for big family or party! Dont eat it alone, too much fat from nuts and coconut oil is not good for your health!  You can keep it frozen for some months as well. Continue reading

GREEN SHISO SAUSE

Shiso Leaves Green and PurplePerilla (shiso) is either red or green, the red perilla having an anise flavor and slightly less spicy than the green variety, which tastes more like cinnamon. The leaves, which are rich in calcium and iron, are used for seasoning, coloring, pickling and garnishing. Shiso leaves can be used whole or cut into strips. Use the flower buds by collecting the seeds at the end of the season to sprinkle on salad. The Japanese, in particular, use the red variety to color umeboshi and pickled ginger. Perilla seeds form an essential part of the famous seven spices of Japan, which originated more than 300 years ago in Kyoto.

Recipe:

1/2 cup cashews, soaked

1 tablespoon lime juice

10 Vicia faba, also known as the broad bean, fava bean, faba bean, field bean, bell bean, or tic bean

5 leaves shiso (Perilla frutescens)

2 teaspoon white miso

1 big date or 1 teaspoon agave

Pinch salt / 2 tablespoon water or more if needed. Blend until very smooth.

Almost sesame seeds in Japan are already roasted, but you can find a raw white and black sesame seeds online or at healthy organic shops. Sesame seeds add a nutty taste and a delicate, almost invisible, crunch to many Asian dishes. They are also the main ingredients in tahini (sesame seed paste). Not only are sesame seeds a very good source of manganese and copper, but they are also a good source of calcium, magnesium, iron, phosphorus, vitamin B1, zinc and dietary fiber. In addition to these important nutrients, sesame seeds contain two unique substances: sesamin and sesamolin. Both of these substances belong to a group of special beneficial fibers called lignans, and have been shown to have a cholesterol-lowering effect in humans, and to prevent high blood pressure. Sesamin has also been found to protect the liver from oxidative damage. Continue reading

Almond milk

Creamy rich almond milk made from raw nuts can keep in your fridge for up to 5 days! Your kids will love it sweet or with fruits. I love my morning smoothie time, often use nuts milk to make different kind of yummy smoothie. My son never had a milk, only nuts and seeds milk. Nut milk is one of the very easiest raw food products to make at home. Almonds are rich in vitamin E and calcium and are nearly 20% protein. You can use any kind of raw nuts or seeds, so you can taste different kind milk. I often make my sesame milk or hemp milk. Hemp seeds are very fat, so please add more water 4-5 cups. Almond milk has the most neutral flavor, my son likes only almond milk and cashew nut milk. You can easy to find shelled hemp seeds in animal shops, usually they sale it for birds 😉  Continue reading

Organic Kale Shots

Fresh juices, fresh raw smoothies, power boosters and even Norwalk cold press juice! Everything of them you can try in Sky High Juice Bar!

This a very small bar near Omotesando station I visited with my friend Nodoka last week. Just after a luch in raw food restaurant we decided to try organic kale shots.

Small glass of fresh, a little bitter kale juice. Its not easy to find kale in Japan, so Kale sounds like very exotic juice 😉

Raw Food Cafe in Tokyo

Last Friday I went with my friend to Raw Food Cafe “Wednesday on Friday” which is near Omotesando station.  It works only on Fridays. Nice place, very yummy food, friendly and hospitable staff. One more nice Raw Food place in Tokyo!
